Trouble with that is U7s & U8s share the same pitches.
If you do the U7s, U9s & U11s first, you can double the simultaneous playing and get the age groups done in half the time.
Less standing around, fewer bored, misbehaving kids.
Then switch to U8s, U10s, U12s. Again, matches over in half the time as there's twice the number of pitches to play on.
Sure there will be some siblings but most will be able to only attend for half the time.

At the beginning of the season I attended a minis festival that did the 7s->9s first and the 10s->12s afterwards.
There are small niggles like what happens if you have siblings in the different halves? Also, times had to be carefully communicated.
But overwhelmingly I'd say it was a very good idea and the festival was the better for it.

Of the many issues at festivals for the participants, I feel the worst is the "waiting around time".
It's not uncommon for large festivals to allocate one pitch per pool per age group and this can mean waiting times of over an hour to play for 10 minutes.
So, a suggestion for organisers....
Schedule the games differently.
U7s&Us8, U9s&U10s and U11s&U12s play on the same size pitch so instead of having one pitch for the U7s and another for the U8s, allocate *both* (or all 4, whatever) to the U7s. Play all their matches and then get the U8s going while presenting the trophies for the U7s.
Do the same with the U9s/U10s & U11s/U12s.
Half as much standing around, around half as much car parking space (if you advertise the expected starting times well in advance) and shorter queues - meaning less frustration and better takings! - at the burger stands & bar.
